Chinese Almond Cookies

These are another of our favorite Christmas cookies!

Unlike the large, crunchy almond cookies served in Chinese restaurants, these are small, soft and lightly scented with orange.

You won’t be able to taste the orange after they are baked, but the citrus enhances the almond flavor.

They have a wonderful chewy texture.

I like to pop them in mini metallic wrappers for a festive look during the holidays!

These cookies are not too large. We like our Christmas cookies miniature–that way you can try some of everything on the table!

Plus, there is an elusive quality about bite-sized gems that accentuates the flavors – almond extract in this case.

Good things come in small packages, so says the girl called Gidget. 🙂

Chinese Almond Cookies

Dense, chewy almond cookies scented with orange - it enhances the almond flavor!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs (one to be used for egg wash)
  • 3/4 cup granulated sugar
  • 1 cup vegetable oil
  • 1 tablespoon orange juice
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 tablespoon water
  • Slivered almonds, for topping

Instructions

  1. Preheat oven to 350°F. In a medium bowl, whisk together flour, baking powder and salt; set aside.
  2. In a large bowl, beat one of the eggs with sugar. Mix in oil, juice and extracts. Stir in flour mixture until well combined.
  3. Knead dough until smooth and roll into 1-inch balls. Place on ungreased cookie sheet 2 inches apart.
  4. Beat remaining egg with water. Brush on top of cookies. Press a silvered almond into the top of each cookie and bake for 8-10 minutes. Remove to wire rack to cool.

OMG these are good and easy to make. I substituted the 1/2 cup flour with almond flour and added a little orange zest. Will have to make a double batch next time I make them. Thank you for an excellent recipe.
