Sunflower Seed Butter Cookies
Here is another dessert recipe from my 30-day Real Food diet!
It’s rare to find a cookie without white or brown sugar, since sugar plays such a significant roll in the structure and texture of baked goods, but you won’t even know it’s missing in these cookies.
Likewise, there are no eggs or egg substitutes in these cookies, but they’re so soft and chewy you can’t tell the difference.
Sunflower seed butter is one of the new food discoveries I made while on the diet and I just love it. I use SunButter brand and I’ve found that Target is the most inexpensive place to buy it in my area, but Trader Joe’s also carries their own brand.
I like these cookies best topped with pumpkin seeds. It might make more sense to top them with sunflower seeds since that’s the star ingredient, but I’ve tried them with everything from nuts to flax seeds and there’s just something about the color and crunch of pumpkin seeds that grabs me – and has me reaching for another cookie.
Do not be alarmed if after 12 hours the cookies begin to turn a beautiful velvet green from the inside out. The first time I made these I freaked out and thought they had been overtaken by some sort of super mold.
After some quick research, I found that it’s simply a chemical reaction between the baking soda and natural properties in sunflower seeds. They’re great for a naturally green St. Patrick’s day! 🙂

Sunflower Seed Butter Cookies (vegan)
These vegan cookies are whole grain and contain no refined sugar!
Ingredients
- 1 cup whole wheat pastry flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup natural sunflower seed butter
- 1/2 cup pure maple syrup
- 3 tablespoons olive
- 1 teaspoon vanilla extract
- 1/2 cup raw hulled pumpkin seeds (pepitas) OR sunflower seeds (optional)
