Today marks the 100th recipe on Kitchen Gidget! Although this blog has had a slow start over the past 2 years, I am thoroughly excited for 2016 and the things to come! But today, I wanted to look back and revive this recipe for Peanut Butter Chip Blondies that I originally posted in 2013… The photo from back then seriously makes me cringe, but these blondies are the best I’ve ever had and deserving of a makeover.

They are so good that most of the time we double the recipe. An 8×8 pan just doesn’t cut it when half of the bars are always devoured within 5 minutes of coming out of the oven! Blondies are often paired with chips – milk chocolate, white chocolate, butterscotch – but the peanut butter and brown sugar combination is positively magical. Fresh and warm from the oven while the peanut butter chips are still gooey is my favorite way to eat them.

Peanut Butter Chip Blondies

Yield: 9
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Soft and chewy blondies with peanut butter chips. The brown sugar/peanut butter combo is irresistible!

Ingredients

  • 6 tablespoons butter
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup peanut butter chips

Instructions

  • Preheat oven to 350F and grease an 8×8 baking pan.
  • In a medium saucepan melt the butter. While the butter is melting, whisk together the flour, baking powder and salt.
  • Remove butter from heat and add brown sugar. Beat in eggs and vanilla. Add to dry ingredients and stir until just combined. Pour into the prepared pan and sprinkle with peanut butter chips.
  • Bake for about 20-25 minutes or until edges are set and a toothpick inserted in center comes out mostly clean.
  • Notes

    This recipe can be doubled and baked in a 13x9 pan.

    Room temperature, they will get really hard in the fridge.

    I made these today, they are very good! The bottom part turned out more like cake though, so I'm not sure what I did wrong. I made it in a 9x13 pan, so I doubled the recipe including 4 eggs total. Maybe that is the difference? They are still yummy but I was hoping for a more chewy type bar if that makes sense? I could have over mixed it too.... I'm sure it was operator error, haha! I'll try again, but if you have any advice, let me know. My kids and husband will still love them! Thanks! Shannon

    @Shannon, Mine came out cakey as well (8x8 pan). I did measure the flour carefully (by gram weight), but I may have over-mixed. I also added dry ingredients to wet, rather than the other way around. Emily

    To keep things chewy instead of cakey, measure the flour carefully by spooning it into the cup and then leveling off. Don't overmix. Hope that helps next time!

    So fast, so easy, so yummy! I had an idea to brown the butter, which I think probably made the caramel flavor even more pronounced. Love this recipe!
