If you’ve never tried a fruit and salt paring you must!

It may sound weird to some of you, but salt actually enhances the sweetness of the fruit.

It’s not a new concept either. In Italy they pair sweet melon, such as cantaloupe, with thin slices of prosciutto (salty ham).

In Mexico, it’s common to season fruit with lime, chile and salt (Tajin).

Feta cheese is quite salty so it works great. I also love the creamy texture it adds.

If you’ve not yet tried watermelon and feta, I encourage you to give it a try. I think you’ll be pleasantly surprised!

Normally when I’m at home eating this by myself, I’ll just grab a bowl of watermelon, sprinkle on some feta cheese and chow down.

But when I want something a little fancier, like a dish to pass at a cookout, I’ll dress it up.

A little lemon and mint enhance the sweet and salty combo beautifully.

My sister loves to add fresh basil instead of mint. She swears it’s the best like this. Or you could add both basil and mint!

I once toured a factory that made hand-crafted popsicles. As the chef explained how to make the best strawberry ice pops, he said to always, always add some citrus to the fruit since it has a magical way of making a strawberry taste more like a strawberry.

He said this applies to all fruit, and the concept has stuck with me ever since. So, a little lemon goes a long way. The main flavors should still be watermelon and feta.

Like I mentioned before, this makes a great dish to pass at a barbecue and it’s versatile.

Serve it as a side dish alongside the other salads like creamy Spaghetti Salad with Italian Dressing or Lemon Pasta Salad if you want to keep the feta theme going.

Or it can also be served as a dessert. I never pass up the opportunity for dessert, especially if no-bake Oreo Cake is being served, but during the heat of summer I like to end the day with something light, refreshing and sweet.

Watermelon and Feta

Yield: 6 servings

This watermelon and feta salad is the perfect sweet and salty combo! Especially lovely as a brunch side dish.

Ingredients

  • 3 lbs Seedless Watermelon, with rind (~2 lbs without)
  • 1 tablespoon Fresh Mint, chopped
  • Juice from half a Lemon
  • 2 ounces Feta Cheese, crumbled

Instructions

  1. Remove the rind from the watermelon and cut into 1-inch cubes.
  2. Place in a large bowl and add the mint and lemon juice. Toss to distribute and taste if additional lemon juice is needed.
  3. Sprinkle the feta on top of the salad and serve.
