I love Mexican food. I could never decide between my Mexican food and Puerto Rican food!

Needless to say Latin food has my heart and so does this baked queso fresco.

It’s so simple! All you really need are two ingredients – salsa and queso fresco.

You can use salsa verde or salsa roja – homemade or store bought.

I went with green salsa because I love it. I miss making my own and roasting all the vegetables, but we can’t get tomatillos while we’re stationed here in Japan. 🙁

Similarly, you can choose the spice level your family prefers (spicy for us!).

This is the salsa verde I use and it has the best authentic flavor I can get from a jar.

I love that this appetizer can be made all year long. In the cooler months pop it in the oven, and in the summer it can go on the grill.

What does queso fresco taste like?

Queso fresco is a milky, mild tasting fresh cheese with a crumbly texture. This appetizer starts with a round wheel of queso fresco.

Some of my favorite ways to use queso fresco include Queso Fresco Enchiladas, cool and creamy Queso Fresco Dip or sprinkled on Mexican Corn in a Cup.

How do you get queso fresco to melt?

Queso fresco is not a melting cheese, per se.

You’ll see that when melting queso fresco, it takes on a puffy texture. Reminds me of cheese curds!

It will not be ooey-gooey like cheese on a pizza, nor will it be smooth and drippy like nacho cheese sauce. It has a unique texture all its own!

Making the baked queso fresco dip

To prepare, place the cheese in a heat proof dish. I used my mini cast iron pan.

I have a few of them and they are perfect for dips, skillet cookies, individual pot pies, etc!

Top with salsa. Bake or grill for about 20 minutes until soft, melted and the salsa is bubbly.

Serve with corn chips and dig in!

This queso fresco  makes a great a taco filling. Stuff in tortillas for a quick and delicious vegetarian taco dinner.
