Buffalo Chicken Roll Ups

Buffalo wing lovers rejoice! These buffalo chicken roll ups with cream cheese, celery and cheese make a super easy appetizer. The spicy creamy filling is rolled up in tortillas for the ultimate snack!

Buffalo Chicken Roll Ups Recipe

We love anything with buffalo sauce around here! The spicy flavor is so addicting!

This recipe is based on the ULTIMATE appetizer – buffalo chicken dip. You can learn how to make buffalo chicken dip here.

What I love about these buffalo chicken tortilla roll ups with cream cheese is that they are served cold.

That means they can be made ahead of time and are easy to transport if necessary.

First ingredient you’ll need is shredded, cooked chicken.

Leftover rotisserie chicken works well, but I prefer to cook chicken breasts in the Instant Pot. (I just got one and I’m in LOVE)!

That way I can cook extra and use it them for other meals throughout the week, like quick green chile chicken enchilada hand pies.

How to shred chicken:

  • While the chicken is still slightly warm shred with two forks.
  • Let your electric stand mix with paddle attachment or hand mixer do the work.
  • Place in food processor and lightly pulse. This will produce a more finely shredded texture.

Now that you have your chicken, the first step is to prepare the filling.

Mix cream cheese (well softened), crunchy celery, hot sauce and blue cheese.

If you don’t like blue cheese (or don’t think your guests will) substitute cheddar cheese instead (we like it better with cheddar).

Combine everything along with some black pepper to taste.

Next, spread a thin layer on flour tortillas. I used about 1/2 cup for 10-inch wraps.

You’ll need to adjust the amount if your tortillas are a different size.

Roll up pinwheels tightly and wrap in plastic wrap.

Refrigerate about 30 minutes or longer before slicing.

I cut off the ends first, then cut into 1-inch slices.

To complete this dish, serve these buffalo chicken roll ups with ranch dressing for dipping!
