One pot meals are a life saver and pasta always comes in clutch for dinner like this Puerto Rican Chicken Pasta.

One of our favorite ingredients, however, is Italian sausage. They are literally filled with flavor and cook up in no time.

They add so much to a dish without any work!

When paired with peppers and onion they are MAGIC. We love them in sandwiches like these Italian Sausage Cheese Bombers.

I was going to call this recipe sausage and peppers rigatoni, but you can use any short pasta you want.

I love rigatoni because it’s hearty and has a great shape for holding lots of sauce. Penne is a great alternative.

To begin, cook the sausage links before slicing into rounds. This way the sausages keep their shape and it adds a ton of flavor while they’re browning on all sides.

I used hot Italian sausage, but you can choose your favorite flavor.

If you’re on a time crunch, you could even use the ground sausage and crumble it while cooking.

After the sausages have browned, remove them from the pan and cut into rounds, slightly at a diagonal.

They will still be slightly pink in the middle but finish cooking later.

Return them to the pan along with the peppers and onions and cook everything together for a couple minutes.

Add the remaining ingredients and bring it all to a boil. Then lower the heat and simmer until the pasta is cooked.

Give it a stir. It should be nice and saucy at this point and the pasta will continue to soak up the liquid.

You can either stir the cheese into the pasta or sprinkle it on top (or both!).

I used a mix of provolone and mozzarella.

Grated parmesan would also be tasty but you can use your favorite!
