Limber de Cheesecake from Puerto Rico is like cheesecake filling in popsicle form! Beat the heat with this creamy frozen treat!
In Puerto Rico this frozen treat is known as “limber.”
It’s a cross between an Italian ice and a popsicle.
Limbers come in all different flavors from Limber de Nutella to various tropical fruits.
Today I’m sharing this recipe for limber de cheesecake.
It’s based on my Flan de Queso recipe which is a delicious cross between flan and cheesecake.
I looove cheesecake desserts like Cheesecake Milkshake without ice cream.
This is the perfect dessert on a hot summer day!
Best of all, they’re made in cups – no special popsicle molds are needed.
Limber de Cheesecake
The ingredients are simple:
- Cream cheese
- Sweetened condensed milk
If you don’t have sweetened condensed milk you can use regular or evaporated milk plus white sugar to sweeten.
Start off with ½ cup and add to taste until desired sweetness is achieved.
I prefer the condensed milk since it gives it a thicker, creamy texture.
Regular milk will have an icier texture.
The ingredients are combined in a blender until smooth, then poured into cups of your desired size.
I like using 5 ounce cups. It’s the perfect single serving.
Do not fill all the way to the top since liquids expand when frozen.
Tip: place the cups on a cookie sheet which provides a flat surface and makes it easy to transfer to the freezer.
Freeze until solid through and through. This will take about 4 hours, but I usually go overnight just to be sure.
When ready to eat, gently squeeze the bottom of the cup so the frozen limber pops up.
Flip the limber de cheesecake over and place it upside in the cup.
Now the cup is like an ice cream cone or a push pop and you can eat it without a spoon.
