Cinnamon Chocolate Chip Cookies

I have to admit I was indifferent to milk growing up—until I met my husband. I drank it in my cereal, but I never appreciated its cool creaminess like I do now.

Cinnamon Chocolate Chip Cookies

Soft and chewy cinnamon chocolate chip cookies with the warm spice of cinnamon throughout. White chocolate chips add a creamy vanilla taste!

Ingredients

  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 1/2 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • Milk, for serving

Instructions

  • In a large bowl, whisk together flour, cinnamon, cornstarch, baking soda and salt; set aside.
  • In the bowl of a stand mixer, cream together butter and sugars on medium-high speed until light and fluffy, about 3 minutes. Beat in egg and vanilla, and mix until combined, about 1 minute. Stir in dry ingredients just until combined, and then mix in chocolate chips.
  • Roll 1 1/2 tablespoons of dough into balls and place them on a cookie sheet lined with parchment paper or silicone mats. Refrigerated until thoroughly chilled; at least 30 minutes.
  • Bake at 350°F for 10-11 minutes or until the edges are just set and begin to brown. The cookies may look soft and under-baked. They will continue to bake on the cookie sheet. Cool cookies on baking sheet for 5 minutes, before transferring to wire rack to finish cooling completely.
  • Serve with a cold glass of milk!
