Cookie Butter Rolls

Once upon a time I decided to get experimental in the kitchen. Armed with a tube of crescent rolls, I filled them with everything from dark chocolate to Nutella to Biscoff Cookie Butter Spread in order to see which one I liked best scientifically determine how they turned out.

I love me some Nutella (have you tried my Nutella Cream Puffs??), but the Biscoff Spread won hands down.

If you’ve never had cookie butter – you must get thee to the nearest store for some! It’s a spread like peanut butter or Nutella, but it’s made from ground up speculoos cookies and the happy tears of magical fairies

Okay, that last part is an unsubstantiated claim, but it really does taste incredible! It tastes a bit like caramelized sugar with hints of cinnamon.  You can find it at grocery stores in the peanut butter aisle labeled as Biscoff Spread. Or you can find it at Trader Joe’s labeled as Speculoos Cookie Butter.

This post is not sponsored by either company – I just love it!

I decided to do some additional experimenting with these cookie butter rolls. I left some plain, some I sprinkled with cinnamon sugar before baking and others I drizzled with white chocolate after baking.

Then I had to taste them all. It’s a tough job being a food blogger, but someone has to do it.

I liked them plain and simple best, but the cinnamon sugar really highlighted the spice notes of the cookies. My husband on the other hand scarfed down the white chocolate ones.

I asked him to take the leftovers to work and later found out that he ate them all by himself! Hard to blame him when they’re so tasty, but you’ll just have to make them yourself to find out.

I love these pastries for breakfast with a hot latte, as an afternoon snack or even a sweet treat after dinner. Kids will love them as well and you can’t get any easier than a two-ingredient recipe!
