1cupwhole wheat pastry flouror use all-purpose flour
3.5ouncebox instant vanilla pudding mix
1teaspoonbaking soda
¾cupunsalted butterroom temperature
¾cupbrown sugarpacked
¼cupsugar
1large egg
1teaspoonvanilla extract
1cupsemi-sweet chocolate chips
Instructions
Whisk together flour, pudding mix and baking soda.
In a separate bowl, cream butter and sugars until light and fluffy, scraping down as needed. Beat in egg and vanilla. Stir in dry ingredients and mix until just combined, then stir in chocolate chips.
Roll 2 tablespoons of cookie dough into balls and space 2-3 inches apart on baking sheets that have been lined with parchment or a silicone mat. Cover with plastic wrap and chill for at least 1 hour.
Preheat oven to 350ºF and bake cookies for 9-11 minutes. Cookies will appear puffy and undercooked, but set up as they cool. Allow to cool on baking sheet for 2 minutes before removing to wire rack to cool completely.
