Chickpea Tuna Salad

Just wanted to share a quick recipe for this upcoming week. I take my own lunch to work (usually a peanut butter sandwich on 100% whole wheat), but after a while it gets boring so I’ll take something else–like tuna salad. My favorite way to eat tuna salad is with chopped onions and pickles. I have to have kettle cooked potato chips on the side (although I’ve been known to put them inside my sandwich along with bacon) and Miracle Whip is a must! Of course, you can use mayonnaise if that’s your preference, but I love that sweet, tangy zip.

Sometimes, though, I get tired of eating the same old tuna and this recipe is just the ticket to give it a boost. Loaded with fiber-rich chickpeas to keep you feeling fuller longer, and spiced with Old Bay, try this recipe and rejuvenate your lunch routine.

Chickpea Tuna Salad

A twist on classic tuna salad, this one is seasoned with Old Bay, plus chickpeas for fiber.

Ingredients

  • 2 (5 ounce) cans of tuna
  • 1/2 heaping cup canned chickpeas
  • 2 tablespoons onion, chopped
  • 1/4 cup mayonnaise or Miracle Whip
  • 2 teaspoons Old Bay Seasoning
  • Wedge of lemon, for serving

Instructions

  • Gently combine all ingredients. Taste and adjust ingredients to your taste and consistency preferences. Squeeze fresh lemon over salad and serve on bread, crackers or lettuce.
