I've been on a slider kick lately. Did you check out my Hawaiian Ham and Cheese Sliders? Looove the pineapple on those!

This recipe was inspired by one of my friends. She is the queen of cooking chicken in the crock pot and using it multiple ways throughout the week.

It always comes out tender and juicy, and she rotates the seasonings so it never gets boring.

I thought slow cooker chicken parmesan sliders with mozzarella cheese would be delicious.

Plus, they are so easy to make and healthier since it doesn't involve breading and frying chicken.

In a crock pot, cook chicken with marinara sauce until it shreds with a fork.

You can simply serve this on buns with cheese for dinner, or turn it into party sliders like I did.

You could also go low-carb with a chicken parmesan veggie bowl. So many options!

I served these on mini Hawaiian bread rolls and gave them the royal treatments with a cheesy garlic butter sauce that was divine!

Bake for a few minutes until everything is hot and the cheese is melty - so good!

The slow cooker part of this recipe is one of my favorite aspects because I can use the leftovers throughout the week.

Ingredients

  • 1 ½ pounds boneless skinless chicken breast
  • 2 teaspoons salt divided
  • 2 teaspoons garlic powder divided
  • 3 cups marinara sauce divided
  • 24 slider rolls
  • 8 ounces mozzarella cheese (or provolone) shredded or sliced
  • ½ cup butter melted
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon parsley flakes dried or fresh

Instructions

For the slow cooker chicken:

  • Place chicken in slow cooker. Sprinkle with 1 teaspoon salt and 1 teaspoon of garlic powder. Cover with 2 cups of marinara and cook on low for 8-10 hours or high for 4-6.

  • In a small bowl, combine the melted butter, parmesan, parsley, 1 teaspoon salt and 1 teaspoon of garlic powder. Pour over sliders. Cover with aluminum foil and let sit for 10 minutes while oven preheats to 350°F.
  • Bake for 15-20 minutes, then remove foil and bake for about 2-5 minutes, or until the tops are toasted, the cheese is melted and the chicken is hot.
